Liver Health and Animal Fat

Question: Dr Cabot’s diet recommendations are very different to yours. Why does she say to minimise animal fat and use olive oil instead for Liver health? - Carolyn

Answer: I am not familiar with Dr. Cabot’s work, but she is probably just repeating the same politically correct nutritional “advice” that we hear everywhere, which always includes a very unscientific demonization of saturated fats. It has been know for at least 60 years that saturated fats protect the liver and animal fats are mostly saturated. Plus animal fats from grass-fed animals supply vitamin A, which is very important for liver function.

For liver health, it is also very important to avoid fructose because all fructose has to be processed in the liver. In animal studies in which rats were fed large amounts of fructose, they developed livers similar to those of alcoholics. So anything containing high fructose corn syrup should be avoided, as well as fruit juices, which are very high in fructose.

Olive Oil is a healthy, traditional oil but it does not contain any Vitamin A. To read more about animal fat, Lori Lipinsk’s article, Taking the Fear Out of Eating Fat is a good place to start. - Ed
